
Ok, so here is somewhere for me to keep a track of the recipes I find and like enough to adapt and use more than once. I don't know how many times I've googled a recipe, cooked it, loved it, then not been able to find it again when I want to cook it!
Today I made a really tasty Tomato, Lentil and Chorizo soup which I found here: tasty soup but adapted to suit.
Heat a large soup pot over medium heat. Add the oil, onion, garlic, chorizo and chilli flakes and cook for 10 minutes, until the onion is tender and the chorizo is crispy. Add the lentils, tomato, stock, salt and pepper, bring to the boil and cook for 25 minutes or until the lentils are tender. Have a quick taste and season more if necessary. Serve with tasty bread with lashings of butter, enjoy! It was really tasty and simple to make, as you can see, Jed was waiting patiently for his lick of the empty bowl! |
